You lost this one. Obviously you could present your case to eBay and ask them to intercede but that is unlikely since the only legal resolution would have to be in a court of law.
But to answer your question - Yes you have a legal obligation to either pay or return the item.
EDIT - PayPal - the PayPal guarantee only applies to PayPal transactions.
Normally you have cleared funds before sending, as another has commented to contact an ebay helper, but usually I would say you have lost your money and item. If it was of high value you may need contact your local Police also as it may be considered fraud on their behalf, as you obviously had an address to send it to. Perhaps a letter of demand? either way seek help from ebay and local authorities.

Since the buyer deleted his account you wont get paid, perhaps if you open a claim with paypal & the buyer eventually tries to open an account you might get payment but chances are extremely low.

Did you do this transaction through PayPal and Ebay? What I mean is, you didn't take this off site?

yes they do have to pay still. however, you should have waited until they paid. You should try to file an appeal with ebay, because if he has an account with paypal, they can charge his credit card.
